Baked Pizza eggs

Who doesn't want to start the day with a bowl full oozing melted cheese? These simple baked eggs couldn't be easier, just pile on your favourite toppings sprinkle your favourite cheese on top (the more the better...) and pop them in the oven.
P.S Toast soldiers, dripping with butter are absolutely mandatory.
Serves 2
Ingredients:
2 eggs
2 slices of ham
2 large tomatoes, diced
2 teaspoons of creme fraiche or sour cream
A big handful of grated cheese (any cheese will do, a mix of cheese is even better!)
Splash of vegetable/sunflower oil
Pre chop list:
Slice the ham into strips
Dice the tomatoes
Kit List
2 Ramekins / oven proof dishes or 1 larger oven proof dish for sharing
Baking dish which is large enough to fit your ramekins
Oven
Method
Pre-heat the oven to 180C
Add a tiny splash of oil to your ramekins, rub it along the sides and bottom to ensure it’s greased
Sprinkle half of your sliced ham into each ramekin
Add a handful of the diced tomatoes on top (not all of them)
Crack an egg on top of the ham & tomatoes
Add a teaspoon of creme fraiche or sour cream
Add the rest of the tomatoes on top
Sprinkle on the cheese
Place the ramekins in a baking dish and pour enough lukewarm water into the dish to come halfway up the sides of the ramekins.
Pop in the oven for 15 minutes and then turn the grill up for 1 minute to get that cheese hot and bubbling.
