Pea Pancakes

These kid-friendly pea and feta pancakes are perfect for a quick tasty lunch as they can be whipped up in 15 minutes. There's zero chopping in this recipe just a lot of mixing and some frying, so make sure you've got a grown-up ready to help.


INGREDIENTS:

  • 160g peas

  • 1 egg

  • ⅓ block of feta

  • 5 tablespoons plain flour

  • 30ml milk

  • 2 garlic gloves, crushed

  • Salt and pepper


KIT LIST:

  • Microwave

  • Potato masher

  • Mixing bowl

  • Frying pan


METHOD:

  • Pop the frozen peas in a microwavable bowl with a dash of water and microwave for 5 minutes.

  • Add the peas to the mixing bowl and mash them.

  • Next, crumble the feta with your hands into the bowl.

  • Now crack in the egg and add the flour before seasoning well with a big pinch of salt and pepper, then mix everything together.

  • Once fully mixed add a splash of milk and stir so that the mix resembles a thick batter

  • Heat some oil in the frying pan and once it’s hot, dollop in a big spoonful of your pancake mix.

  • Cook on one side until you see bubbles on the surface, this usually takes around 3 minutes. Now flip and fry on the other side for 5 minutes.

  • Voila! These are great dunked in ketchup or served in a pita with tzatziki.
